Day 7:

- Snack: hard-boiled egg
- Dinner: Keto Ground Beef with Zucchini Stew (Crock Pot)
Keto Aromatic Avocado and Eggs “Porridge”
PREP TIME 20 mins & 🍽 Servings: 4
INGREDIENTS:
- 4 large eggs free-range
- 1 avocado cut into cubes 1/2 tsp fresh parsley, finely chopped
- 1/4 tsp mint leaves finely chopped
- 1/2 lemon freshly squeezed
- Salt and pepper to Taste
INSTRUCTIONS:
- Boil the eggs (about 12 minutes for large egg and cut them into 8 pieces.
- Peel the avocado and cut it into small cubes.
- Combine the eggs and the avocado in a bowl; sprinkle with the herbs and pour lemon juice.
- Season with salt and pepper, stir well and serve.

Ketotenders — The Most Delicious Ketogenic Coconut Chicken Tenders
PREP TIME 20 mins & 🍽 Servings: 2
INGREDIENTS:
- 1 lb. chicken tenders about 6-8 pieces
- 1 cup almond flour
- 1/2 cup shredded coconut
- 2 tsp. salt
- 2 tsp. pepper
- 1/2 tsp. paprika
- 1/2 tsp. garlic powder
- 1 tsp. parsley
- 1/2 cup milk
- 2 large eggs
INSTRUCTIONS:
- For the coating- whisk egg and milk in a large bowl. Add chicken and let sit for about 10 minutes.
- Add almond flour and shredded coconut to a shallow dish or pan, season with salt, pepper, paprika, garlic powder, and parsley.
- Coat both sides of chicken with flour and shredded coconut.
- Fry in small batches until golden brown and/or internal temperature reaches 160º.
- Dip in your favorite keto-friendly sauce like ketchup, mustard, or BBQ sauce.

Keto Ground Beef with Zucchini Stew (Crock Pot)
PREP TIME 6 hours 10 mins & 🍽 Servings: 6
INGREDIENTS:
- 1/4 cup garlic-infused olive oil
- 2 green onions diced
- 1 lb ground beef
- 4 zucchini diced
- Salt and pepper to taste
- 2 tsp dried oregano
- 1/2 tsp fresh thyme leaves chopped
- 3 cups water
INSTRUCTIONS:
- Heat the olive oil in a large frying skillet over medium-high heat.
- Add the onions, beef, and pinch of salt: sauté about 5 - 6 minutes stirring frequently.
- Add the zucchini, herbs, and salt, and pepper to taste: stir well.
- Transfer the mixture to your Slow Cooker.
- Pour the water and stir well.
- Cover the lid and cook on LOW for 6 hours.
- Taste and adjust seasonings.
- Serve hot
