Day 7:

  • Snack: hard-boiled egg

Keto Aromatic Avocado and Eggs “Porridge”

PREP TIME 20 mins & 🍽 Servings: 4

INGREDIENTS:

  • 4 large eggs free-range
  • 1 avocado cut into cubes 1/2 tsp fresh parsley, finely chopped
  • 1/4 tsp mint leaves finely chopped
  • 1/2 lemon freshly squeezed
  • Salt and pepper to Taste

INSTRUCTIONS:

  • Boil the eggs (about 12 minutes for large egg and cut them into 8 pieces.
  • Peel the avocado and cut it into small cubes.
  • Combine the eggs and the avocado in a bowl; sprinkle with the herbs and pour lemon juice.
  • Season with salt and pepper, stir well and serve.

Ketotenders — The Most Delicious Ketogenic Coconut Chicken Tenders

Day 7 Recipe  - Prosper Diet Program



PREP TIME 20 mins & 🍽 Servings: 2

INGREDIENTS:

  • 1 lb.  chicken tenders about 6-8 pieces
  •  cup  almond flour
  • 1/2 cup shredded coconut
  •  tsp.  salt
  • 2 tsp.  pepper
  • 1/2 tsp. paprika
  • 1/2 tsp. garlic powder
  • 1 tsp. parsley
  • 1/2  cup  milk
  •  large eggs

INSTRUCTIONS:

  • For the coating- whisk egg and milk in a large bowl. Add chicken and let sit for about 10 minutes.
  • Add almond flour and shredded coconut to a shallow dish or pan, season with salt, pepper, paprika, garlic powder, and parsley.
  • Coat both sides of chicken with flour and shredded coconut.
  • Fry in small batches until golden brown and/or internal temperature reaches 160º.
  • Dip in your favorite keto-friendly sauce like ketchup, mustard, or BBQ sauce.

Keto Ground Beef with Zucchini Stew (Crock Pot)

PREP TIME 6 hours 10 mins & 🍽 Servings: 6

INGREDIENTS:

  • 1/4 cup garlic-infused olive oil
  • 2 green onions diced
  • 1 lb ground beef
  • 4 zucchini diced
  • Salt and pepper to taste
  • 2 tsp dried oregano
  • 1/2 tsp fresh thyme leaves chopped
  • 3 cups water

INSTRUCTIONS:

  • Heat the olive oil in a large frying skillet over medium-high heat.
  • Add the onions, beef, and pinch of salt: sauté about 5 - 6 minutes stirring frequently.
  • Add the zucchini, herbs, and salt, and pepper to taste: stir well.
  • Transfer the mixture to your Slow Cooker.
  • Pour the water and stir well.
  • Cover the lid and cook on LOW for 6 hours.
  • Taste and adjust seasonings.
  • Serve hot
