Instant Keto Breakfast Porridge

PREP TIME 10 mins & 🍽 Servings: 2

INGREDIENTS:

  • 3/4 cup almonds raw, unsalted
  • 3/4 cup coconut shreds unsweetened
  • 1 cup water
  • 2 tsp coconut oil melted
  • 1/4 cup steviagranulated

INSTRUCTIONS:

  • In a blender of your food processor combines almonds and coconut shreds. Blend for around 30 seconds.
  • Transfer to the bowl of your Instant Pot and pour the water, coconut oil, and stevia sweetener; stir.
  • Lock lid into place and set on the PORRIDGE setting for 3 minutes.
  • When the timer beeps, press “Cancel” and carefully flip the Quick Release valve to let the pressure out.
  • Stir the porridge, taste it, and adjust sweetness.
  • Serve hot.

INGREDIENTS:

  • 6 tablespoons cashew butter
  • 6 tablespoons butter
  • 1 teaspoon vanilla extract
  • ½ teaspoon monk fruit sweetener
  • Pinch of sea salt

INSTRUCTIONS:

  • Line a mini muffin tin with paper liners.
  • Melt cashew butter and butter in a saucepan over low heat, stirring until well combined.
  • Add remaining ingredients, stirring well.
  • Evenly spoon the mixture into the muffin tin.
  • Freeze for at least 1 hour before serving.

Keto 15-Minute Tamari Marinated Steak Salad

PREP TIME 15 mins & 🍽 Servings: 2

INGREDIENTS:

  • 1/2 lb steak
  • 1/4 cup tamari sauce
  • Avocado oil to cook steak in
  • 2 large handfuls of salad greens
  • 1/2 red bell pepper chopped into slices
  • 6-8 grape or cherry tomatoes chopped into halves
  • 4 small radishes sliced
  • 1 Tablespoon olive oil
  • 1/2 Tablespoon fresh lemon juice
  • Salt to taste

INSTRUCTIONS:

  • Marinade the steak in tamari sauce.
  • Prepare the salad by tossing the bell pepper, tomatoes, radishes, and salad greens with olive oil, lemon juice, and salt to taste.
  • Divide salad between 2 plates.
  • Place avocado oil into a frying pan on high heat and cook the marinated steak (or grill the steak to the level of doneness you like.
  • Place the steak on a plate for 1 minute. Cut the steak into slices, and place half of the slices on top of each salad

Keto Easy Fajitas With Even Easier Guacamole


PREP TIME 30 mins & 🍽 Servings: 2

INGREDIENTS:

For the fajitas

  • 1 lb beef steak (choose a steak of your choice, sliced
  • 1 small onion sliced
  • 1 bell pepper sliced
  • 1 Tablespoon cumin powder
  • 1 Tablespoon garlic powder
  • Dash of chili powder
  • Salt and pepper to taste
  • Romaine lettuce leaves optional as wraps
  • 1 Tablespoon coconut oil for cooking with


For the guacamole

  • 1 ripe avocado mashed
  • 1 Tablespoon garlic powder
  • 1/2 Tablespoon onion powder
  • 2 teaspoons lime juice
  • Salt to taste
  • 2 Tablespoons fresh cilantro chopped or use 2 teaspoons (2 dried cilantro)
  • Dash of chili powder optional

INSTRUCTIONS:

  • Add the avocado oil to a frying pan, and add in the onion slices. Then add in the slices of beef and bell pepper.
  • When the beef is cooked, add in the cumin powder, garlic powder, chili powder, salt, and pepper.
  • While the beef is cooking, make the guacamole (instructions on Page 102).
  • Serve with guacamole and romaine lettuce leaves (optional).
