Keto Breakfast Egg Cake
PREP TIME 10mins & 🍽 Servings: 4
INGREDIENTS:
- 6 free-range eggs
- 1 ¼ cups almond or coconut milk unsweetened
- Salt to taste
- 1 Tbsp olive oil
- 1 cup water
INSTRUCTIONS:
- In a bowl, whisk the eggs, milk, and salt.
- Grease with olive oil in a baking dish, and pour the egg mixture.
- Pour the water into the inner pot of your Instant Pot, and insert the trivet or steamer basket.
- Place the baking dish on the top of the trivet.
- Lock lid into place and set on the MANUAL setting for 5 minutes.
- Use Quick Release — turn the valve from sealing to venting to release the pressure.
- Once all of the pressure releases the steam will no longer come out of the vent and you’ll be able to open the lid.
- Transfer cake on a serving platter and serve immediately.

Keto Lemon Black Pepper Tuna Salad

PREP TIME 20 mins & 🍽 Servings: 2
INGREDIENTS:
- 1 cucumber diced small
- 2/3 medium avocado diced small
- 2 teaspoons lemon juice
- Two 5-oz cans of tuna
- 2 Tablespoons coconut mayo (or olive oil mayo)
- 1 Tablespoon mustard
- Salt to taste
- Black pepper to taste
- Salad greens optional
- Olive oil and lemon juice for salad dressing optional
INSTRUCTIONS:
- Mix the diced cucumber and avocado with lemon juice.
- Flake the tuna and mix well with the mayo and mustard.
- Add the tuna to the avocado and cucumber. Add salt to taste.
- Prepare the salad greens.
- Place the tuna salad on top of the salad greens.
- Sprinkle black pepper on top.

Keto Pork Chops with Green Apple Radish Salsa and Broccoli Slaw
PREP TIME 25 mins & 🍽 Servings: 2
INGREDIENTS:
For the pork chops
- 2 pork chops or pork loin steaks or pork tenderloin strips approx. 3/4 lb of meat
- 1/4 green apple diced small
- 1/4 cup red bell pepper diced
- 1/2 cup red onion diced
- 2 radishes diced small
- 1/2 lime juice
- 1 teaspoon mustard to serve with
- Coconut oil to cook with
For the broccoli slaw
- 1/2 zucchini
- 1/2 cucumber
- 1/2 green onion
- 1/2 broccoli
- 1 Tablespoon mustard
- 1.5 Tablespoons coconut mayo (or olive oil mayo)
- Salt and pepper to taste
INSTRUCTIONS:
- Prepare the salsa by dicing the apple, radish, and bell pepper and combining them. Add lime juice.
- Pan-fry the pork chops in coconut oil.
- After the pork chops are done, sit them on a plate while you make the broccoli slaw.
- Serve the pork chops with salsa, mustard, and broccoli slaw.
