Keto Baked Spicy Avocado with Eggs

Recipe for Day 3 - Prosper Diet Program


PREP TIME 25 mins & 🍽 Servings: 4

INGREDIENTS:

  • 2 avocado
  • 4 large eggs free-range
  • 1 tsp cayenne pepper
  • 2 Tbsp garlic-infused olive oil
  • Sea salt to taste

INSTRUCTIONS

  • Preheat the oven to 400 F
  • Cut the avocado in half, remove the seeds and scoop out the avocado flesh.
  • Whisk the eggs with a pinch of salt. Add the avocado flesh and stir well.
  • Pour the egg-avocado mixture into each avocado cavity.
  • Place the avocado with eggs in a baking dish to be stable.
  • Sprinkle the avocado with olive oil and cayenne pepper.
  • Place the baking dish in an oven.
  • Bake for 20 minutes.
  • Serve hot.

Keto Lemon Black Pepper Tuna Salad

PREP TIME 10mins & 🍽 Servings: 2

INGREDIENTS:

  • 1 cucumber diced small
  • 2/3 medium avocado diced small
  • 2 teaspoons lemon juice
  • Two 5-oz cans of tuna
  • 2 Tablespoons coconut mayo (or olive oil mayo)
  • 1 Tablespoon mustard
  • Salt to taste
  • Black pepper to taste
  • Salad greens optional
  • Olive oil and lemon juice for salad dressing optional

INSTRUCTIONS

  • Mix together the diced cucumber and avocado with the lemon juice.
  • Flake the tuna and mix well with the mayo and mustard.
  • Add the tuna to the avocado and cucumber. Add salt to taste.
  • Prepare the salad greens.
  • Place the tuna salad on top of the salad greens.
  • Sprinkle black pepper on top.

For the spinach bacon sauté

  • 5 oz thick bacon or pancetta, diced
  • 1 lb spinach
  • Pepper to taste

For the avocado mint soup

  • 1 medium ripe avocado
  • 2 romaine lettuce leaves
  • 1 cup coconut milk, chilled (from cartons or diluted canned coconut milk)
  • 1 Tablespoon lime juice
  • 20 fresh mint leaves
  • Salt to taste

INSTRUCTIONS

  • Cook the diced bacon in a frying pan.
  • Add in the spinach and cook on medium heat until the spinach is wilted.
  • Then make the avocado mint soup.
