Keto Ground Pork with Scrambled Eggs Frittata (Instant Pot)

Recipe for Day 2 - Prosper Diet Program

INGREDIENTS

  • 2 Tbsp lard
  • 1 spring onion finely chopped
  • 1 lb ground pork minced
  • 6 free-range eggs
  • 2 Tbsp fresh cilantro roughly chopped
  • Salt and ground black pepper to taste

INSTRUCTIONS

  • Press the SAUTÉ button on your Instant Pot.
  • When the word “hot” appears on the display, heat the lard and sauté the onions for about 3–4 minutes.
  • Add ground pork and sauté with a pinch of salt for 2 minutes.
  • Sprinkle fresh cilantro, stir and press the Stop button.
  • Whisk the eggs in a bowl with a pinch of salt and pepper.
  • Pour eggs in your Instant Pot and stir.
  • Lock lid into place and set on the MANUAL setting for 5 minutes.
  • When the timer beeps, press “Cancel” and carefully flip the Quick Release valve to let the pressure out.
  • Serve hot.

Keto Pepper Cabbage Beef Rolls

PREP TIME15 mins, COOK TIME10 mins & 🍽 Servings: 2

INGREDIENTS:

  • 1 lb. ground beef
  • ½ onion diced
  • ½ green bell pepper diced
  • ½ red bell pepper diced
  • 2 Tbsp. cilantro diced
  • 4 cloves garlic minced
  • 2 tsp. cumin powder
  • 1 tsp. onion powder
  • 1 tsp. garlic powder
  • Salt and pepper to taste
  • Coconut oil to cook in
  • 8 large cabbage leaves savoy cabbage or Napa cabbage

INSTRUCTIONS

  • Place 1 tablespoon of coconut oil into a frying pan and sauté the onions, ground beef, and peppers on medium heat in the frying pan.
  • When the beef is cooked, add in the cilantro, ginger, garlic, cumin powder, salt, and pepper to taste.
  • Fill a large pot 3/4 full with water. Bring to a boil.
  • Using tongs, blanch each cabbage leaf in the boiling water (put each leaf into the boiling water for 20 seconds). Then drain, and place the cabbage leaf on a plate.
  • Spoon the beef mixture onto each lettuce leaf and fold it into a roll.

INGREDIENTS:

For the pork chops

  • 2 pork chops or pork loin steaks or pork tenderloin strips approx. 3/4 lb of meat
  • 1/4 green apple diced small
  • 1/4 cup red bell pepper diced
  • 1/2 cup red onion diced
  • 2 radishes diced small
  • 1/2 lime juice
  • 1 teaspoon mustard to serve with
  • Coconut oil to cook with

For the broccoli slaw

  • 1/2 zucchini
  • 1/2 cucumber
  • 1/2 green onion
  • 1/2 broccoli
  • 1 Tablespoon mustard
  • 1.5 Tablespoons coconut mayo (or olive oil mayo)
  • Salt and pepper to taste

INSTRUCTIONS

  • Prepare the salsa by dicing the apple, radish, and bell pepper and combining them together. Add lime juice.
  • Pan-fry the pork chops in coconut oil.
  • After the pork chops are done, sit them on a plate while you make the broccoli slaw.
  • Serve the pork chops with salsa, mustard, and broccoli slaw.
